Great Al-fresco dinner with Frutti di Mare

Well now Sue is back safe and sound from Atlanta and the weather outside in the evening it was a great opportunity for a seafood dinner for two on the deck. Frutti di mare is so easy to do and you can mix and match whatever seafood is readily available. Ditch the scallops and add some calamari or whatever works for you. When ever I get this urge for a seafood blowout like this I always try to time it for the weekend when Jumbo Seafood at Blair Rd is open as everything is so fresh. Send them ...

Chicken Cashew Szechuan

Everyone has a few tattered and torn cookbooks with pages falling out that you just cannot bring yourself to part with. For us, at the top of that list is a very dog eared Betty Crocker's Chinese Cookbook from 1981.  This recipe is from that book and it is one of our "go to" recipes when we fancy a chinese meal at home. Serve this with our Hot and Sour soup as a first course.

The pizza stone method that I prefer below is a decent substitute for the tandoori in this situation as it holds the heat evenly and in only 15 minutes you can easily bake a large platter of naan for a dinner for friends.  You can also use the naan to make a wrap for that left over curry, that is if ...

Trout for a light summer supper

We made our favorite weekend stop at Ali Blu seafood at Blair Road, near Harpers Ferry on Rt 340. On the board today were local fresh trout. These trout weighed in at over 3/4 Lb head off so we bought a couple for tonight and grilled them over charcoal. They were stuffed with a sprig of rosemary and handful of parsley from the garden and rubbed with olive oil. We marinated them for an hour in a mix of lemon juice, white wine and olive oil. As a side, since we also had a bunch of fresh picked ...
